This 2019 whisky from the GlenWyvis Distillery is a rare one.

The distillery is community-owned and sits at the foot of Ben Wyvis in the northern Highlands of Scotland. All of their energy comes from renewable sources, so when their biomass boiler broke down, production halted. 

Winter and summer runs of locally grown barely are fermented for 120 hours, transferred to squat pot stills and then to a range of different casks, each of which impart a unique flavour. 

The makers describe this rare Highland beast as “complex and delicate”, with sweet grape and honeysuckle hitting the nose first, opening into a palette of Bramley apples and fruit crumble, with a finish of oak, dark chocolate and cloves. 

Distilling whisky is a craft, just as much as carving or embroidery. In Dingwall, near Ben Wyvis, the tradition had been lost: the last distillery closed down in 1926. But in 2015, whisky-making returned to the area. The GlenWyvis distillery offered shares to local people and is now 100 per cent owned by the surrounding community.

And they take their craft seriously. There’s attention to detail at every point of the way.
