What do you get if you combine locally grown Concerto barley, renewable energy and centuries of tradition (which encompasses some very fine copper pot stills)? The answer is this beautiful single malt whisky from the Glenwyvis distillery, which is community-owned and sits at the foot of Ben Wyvis in the northern Highlands of Scotland.

This is the second batch from the distillery’s 2018 vintage and the first batch they’ve been able to make widely available, producing 8000 bottles. The makers describe it as “robust” with a “fragrant, spicy character”. We say it’s a fine addition to any whisky lover’s cabinet.

Distilling whisky is a craft, just as much as carving or embroidery. In Dingwall, near Ben Wyvis, the tradition had been lost: the last distillery closed down in 1926. But in 2015, whisky-making returned to the area. The GlenWyvis distillery offered shares to local people and is now 100 per cent owned by the surrounding community.

And they take their craft seriously. This whisky, for example, has been aged in Tennessee whisky barrels, hogsheads used for the Spanish fortified wine oloroso and refilled Scotch whisky hogsheads. There’s attention to detail at every point of the way. 

Each bottle contains 700ml of whisky, which is 46.5% ABV. 

It is made from malted barley, local water and yeast.
